- To a medium bowl, combine ⅓ cup rice vinegar, ⅓ cup warm water, 1-2 teaspoons cane sugar, and ½ teaspoon fine salt.
- Stir well to dissolve the sugar and salt.
- Slice 1 small (or ½ of a large) English cucumber into very very thin slices (a mandolin works well for this).
- Add the sliced cucumber to the vinegar mixture and set aside to marinate for 15 minutes.
- These can also be made up to 2 days ahead and marinated in the refrigerator.
- Drain well before serving.
